Ingredients-

Oil – 250 grams

Paneer 1 cup

Fresh tomato puree – 200 grams

Onion – half a kilo finely chopped

Dry Kashmiri red chilli

Whole coriander – 2 teaspoons

Dry grated coconut – 3 teaspoons

Fennel – 1 teaspoon

Cumin – 1 teaspoon

Green cardamom – 5

Poppy seeds – 3 teaspoons

Peanuts – half a cup

Nutmeg powder – a pinch

Garlic paste – 3 teaspoons

Turmeric powder – 1 teaspoon

Kashmiri red chilli powder – 1 teaspoon

Mustard seeds – 1 teaspoon

Garam masala – 1 teaspoon

Green coriander – 2 teaspoons chopped

Salt According to taste

Method-

Cut the paneer in small pieces and fry it lightly in oil. Do not let it turn brown. Now immediately soak these fried paneer in hot water for only 3 minutes.

Then squeeze out the water and keep them on a paper napkin. This will make the paneer very soft.

Now put oil in a vessel, add chopped onion and fry it. Then add a little salt and sugar to it.

Take out the onion and grind it finely in a mixer and keep it in a vessel, now fry whole coriander, fennel, cumin seeds, dry grated coconut, dry red chilli, peanuts on a pan for 2 minutes and then grind it lightly with water and make a paste.

Heat oil in a pan, then add cumin seeds and mustard seeds. Add ginger garlic paste and stir for some time, after this add the paste of roasted spices and stir for only 2 minutes.

When the paste starts leaving the pan, add tomato puree and stir for 2 to 3 minutes. Then add garam masala powder, red chili powder, turmeric and salt.

Finally add paneer pieces, coriander leaves and nutmeg powder. Cook it for 4 minutes, paneer kolhapuri is ready.
